Special Appearance of Chef Wan at Epicure Malaysia


What goes into your mind when you hear the name Chef Wan? To me, this Malaysian born celebrity chef is one hell of an entertainer and performer besides being just a chef. He never fails electrifies every single crowd he cook for. Not only through his performance skills and delicious food, but also with his humorous jokes. And before i forget, a really humble man too.

Besides being entertain by his perfomance, i really envy and at the same time respect him alot. Firstly, it just seems so fun to be a celebrity chef and secondly he brings Malaysian Cuisine around the world just to give more exposure to our local traditional heritage food . *thumbs up* to you as a Malaysian Food Ambassador!

During his perfomance in Epicure Malaysia that day, he cooked up a really different cuisine. Something not we are all used to, Moroccan Cuisine.

It was hard to see a close up of whats he was cooking above the stage. So, what he did to make us all understand his cooking was to carry the whole hot tajime just to let the crowd take a peek of whats cooking. Great stuff Chef Wan!

After the whole cooking out and eating up, Dato' Steve Day personally went up the stage to thank him and also to promote and explain what Malaysia International Gourmet Festival (MIGF) was all about.

Epicure Malaysia 2011 Day 2 & 3 Cooking Classes


If you didnt know yet, this event is free admission for all with complimentary parking. A great event many missed out this year due to the low publicity. And thats why im blogging here to let more know about this wonderful event :) You might be missing CCC's Epicure Malaysia 2011 Exhibition post and Epicure Malaysia 2011 Day 1 Workshops.

I entered a class which i never regret, a really friendly, sociable chef who studied Accounting and work part time in the kitchen during schoolday, came out to the working world as an accountant for 6 months and realize he was doing shits in the office and followed his truly discovered passion, cooking professionally and i think he never regreted looking back.

I respect chefs who share all their secret, and yes Chef Daniel shares all his knowledge and even brings the example of the cooking process to the crowd to see right in front of their eyes to see, feel, touch and taste. Great stuff!

Keep it up chef, you make everyone happy, including your commis(assistant) you brought along that day. And thank you for the line "sky's the limit", i think homecooks really need to apart to that theory and be less focused on their cookbooks. 

Besides Chef Daniel, there were Macarons and Apple Pie making by Chef Karam from Taylors University College the next day.

Apparently Chef Karam has been doing macarons since 1982 and was trained in Laduree. How true is this?  From what i know, the macarons trend never started even 20 years ago and did Laduree served that then? We should question ourselves now...

Besides cooking classes, i also entered a wine class by Mr. Thomas Ling. A really detailed explanation which could be interesting at the same time but a little too dry.

It was my first time dancing salsa and i must admit it was quite interesting, probably you can woo the girls with this too! heh!

Epicure Malaysia 2011 Workshops Day 1



Besides the exhibition at Epicure Malaysia 2011, there were also cooking classes and lifestyle workshops held in varies different rooms at Sime Darby Convention Centre. As for the first class, i chose Le Cordon Bleu as i would like to see how Sunway University is managing their hospitality division.

Chef Franck Bruwier, the Chef the Cuisine and consultant for Le Cordon Bleu were teaching his food for thoughts with everyone at this lovely event. He teaches and explains to the finest details on how every step, technique, ingredient could affect the final product of a dish. He really did  share and explained almost everything in depth and why a Le Cordon Bleu graduate will be different from the rest.

The fish mousseline was certainly very smooth as he taught us how to make it the smoothest texture possible but it was a little too basic in flavor to me as I probably have a typical Malaysian taste bud which are all either full with spices or dish being spicy. I would prefer it being seared after poached to get a more flavourful flavor but I guess he wanted us to try the basic elements of the food. As for the rest of the dish, it tasted all back to basic and natural flavours from the characteristics of the vegetables could be tasted but wasn’t really my cup of tea.

Next, i entered a Chinese cuisine cooking class because i wanted to see how a Chinese "sifu" do his thing. It was Chef Lam Hock Him, Executive Chinese Chef from Hilton KL. Hilton is well known for their standards, so lets me show you what he cook for us that day.

Chef Lam was really funny, relax and straight to the point person. I guess its still in the Chinese "sifu" that they work like that. But great stuff, i enjoyed the demo.

Savory Salted Egg Prawns. It tasted really pronounced and delicious but if you knew how many salted egg yolks was added to this dish, you will start to think twice before you have your second bite.

Besides something savory, he showed us two Chinese desserts. Two Way Sweetened Crystal Yam.

It consist of only sugar and yam but i still think its not easy to make at home because the way of making sugar was with high fire and consistent stirring , something really different comparing with the basic soft boil stage or caramel stage.

 As for the last cooking class in day 1, i entered Modern Thai by Chef Thiti Thammanatr from Neo Tamarind.

Chef Thiti Thammanatr shows us how he made fusion food with Thai ingredients. He left his homeland(Thailand) and went around the world to start his cooking career. He has a really broad knowledge on various type of cuisines, ingredients and cultures. A really really interesting class for me indeed.

Chef Thiti Thammanatr explaining the reason why going back to basics is important. He also apply different cooking techniques such as using blow torch to make many different dishes and i would say to get the crowd's attention.

Pan-seared Salmon, Thai style Mushroom Salad, Basil Couscous with Bird Eye Chili and Lemongrass infused Vinaigrette. The vinaigrette was the bomb seriously and the thai style mushroom was just simply salted, thinly slice kaffir lime leaves and mushroom being blowtorch. Voila!

Epicure Malaysia 2010 Workshops


For those who love cooking, I think this was the best part of the event, its basically complimentary cooking classes from the pros in the industry. And the first workshop i entered in Epicure Malaysia 2010 held at Sime Darby was...
A Taste of France's Finest Workshop by Chef Khamarullizad Hassan from Royale Chulan KL

Homard de Maine 'Thermidor' Avec le Vieux Style 'Cafe du Beurre de Paris'
or to make it not sound like alien language,
Maine Lobster 'Thermidor' with Old Style "Café de Paris Butter".
The really interesting final product. If i have the money, i would certainly go to the restaurant and dine in like a king, too bad, ill just stay home or try to recreate the recipe :P
I say Voila to this dish! The lobster thermidor was perfect, fresh sauteed lobster with nice creamy sauce which has some kick of sourness in it plus more kick in the hollandaise sauce with nice melted cheese taste as well.
Well blended sauce with the cafe de paris butter. It sounds real complicated and all, but when you taste it, it just exudes feelings through your tongue, heart, mind and soul heheh okayyy maybe that's a little overzealous. But it was rockin'.
This dish is in the menu in L'Heritage of The Royale Chulan Kuala Lumpur for the month of MIGF '10. Price of the festival menu cost RM 200++ per person for light festival menu which consist of 6 course and RM400++ per person for full festival menu which consist of 10 course meal.
*Not inclusive of wine.

Chef Radzi really explains in depth about the different kinds of chocolate in the world, different techniques used in chocolate making and so much more extra knowledge about chocolates.

I think he teaches too much about chocolate which will make him lose his own specialty. In a way.
Like a master teaching his student everything and then being taken over by the student.


Next was A Slice of Just Heavenly Workshop by Chef Nigel Skelchy from Just Heavenly

Chef Nigel with his really fun, exciting and funny approach, attitude and charisma which makes him what an interesting chef. Perhaps he can be the next Chef Wan?

Chef Nigel is one of the owner of Just Heavenly. The infamous Cake House which cake lovers drool at the sound of it!

Bombe Alaska, a simple sponge cake with ice cream,meringue and flambeed brandy. Its really juicy, yes; the ice cream makes the spongecake even smoother with a tinge of alcohol and a meringue on top for perfection. Everyone rushed to grab a portion for themselves and destroyed the great artwork. Oh well, it was meant to be eaten and enjoyed anyways (:


The next day, I went to see the ex lecturer of Taylor's University College's workshop. He is currently the Executive Head Chef in Sunway University College.

Explaining every single ingredient he used, which he is thorough, specific and is very particular about.

Truffle! This black stuff cost you a bomb, trust me, don't be fooled by its looks.
Everyone in the room taking a real sniff to smell out the expensiveness and uniqueness of this truffle. Did you know pigs are used to scope truffles out? Oink!

Yellow Watermelon with Coriander Pesto. The one of a kind appetizer, with juicy yellow watermelon with crunch of pine nuts serve with coriander pesto, mix lettuce, raspberry and blackberries. Does it not seem UNIQUE?

Pan-Sear Wagyu Beef with Black Truffle and Sauteed Aspagarus served with Puy Lentil Ragout, Hollandaise Sauce and Cranberry Coulis.
Firstly this is my first time tasting truffle. Its not the premium and of best quality but honestly i didn't really find it that special and actually,....kinda weird. That's fungi for you.
Besides truffle(since its the most expensive ingredient on the plate), the Wagyu beef was OH! SO GOOD, just so smooth and easy to chew. The hollandaise sauce, cranberry coulis and puy lentil ragout is well paired i must admit.

Strawberry Crumble, I guess this is one of his specialties since he specializes as a Pastry Chef.
His Sugar arts are SUPERB!
By the way, Chef Patrick is currently leading the Malaysian Pastry Team as captain at the upcoming World Pastry Cup in Lyon, France 2011.

I say *double thumbs up* for this dessert! Super sweet strawberry stew with some mixture of lemon cream, bits of crumble and creamy strawberry chantilly, drools* just thinking about it again.


Last but not least, Workshop from Chef or should I say Datuk Wan. How could i miss this?!
Of course I just had to see how good our very own Malaysian Food Ambassador and famous celebrity chef performed in front of my eyes.

Chef Wan frying up the belacan which makes everyone in the room sneeze. His 'performance' was so entertaining, exciting, fun and yet it shows how confident, professional and how talented is he as a chef. No flattery, i swear.

Chef Wan always puts a smile on his face and acts really humble and nice. Just like what an ambassador should be like.

So what did he cook? Asian cuisine? Probably something as similar as what we eat daily you might think?
The answer is NO!
His Asian cooking and recipes changed my perception on him, the food in Malaysia, and how much more hidden talent Malaysian food has. That day he introduced 3 royal dishes.  
Yes! Food for the Kings and Queens, only cooked on special occasions and ceremonies and only for the royalty.

Nasi Ulam Diraja/ Special Herbed Rice. The 12 types of Ulam he added inside the rice which at that moment I wanted to ask, "Are you sure chef?"
That's too many ingredients don't you think? But it came out perfecto! I love Malay cuisine and this is something you cant find in any Raya open house or Malay wedding. This is one of a kind delicious!

Opor Daging Pekan / Pekan Beef Curry. The dry, spicy, and tender beef with full of flavors which resembles rendang to me. The odour of this Opor Daging Pekan is so terrific I just need to cook this soon enough!

Ayam Kuzi Johor. The thick gravy which taste really appetizing, the burst of flavorful aromatic herbs and the chicken was just really cooked to perfection!

Its not those kind of curry chicken which you get outside which the meat is all dry or not intact.
Chef Wan's food is just indescribable, damn I wish I had him as my personal chef or maybe a personal mentor.

According to Chef Wan there are 500 recipes in Pahang of which only 200 recipes have been discovered and documented. Most of the recipes are either extinct or with the really super old lady which could barely communicate or have the energy to cook anymore. Hmmm. *food for thought?*

Its really traditional, authentic and unique food recipes which you just need on your bookshelf! And even if you don't need it, you'd want it!
