Souffle Omelette

If you didn't know, CCC loves eggs!
Its a very basic ingredients but does wonders to any dish! From appetizers to desserts.
A very big thank you to Chef Kevin for teaching me this method of cooking eggs.
Something simple with a twist *ofcourse* and extraordinary name!

Ingredients:
2 Eggs (Seperated)
Butter or cooking oil
Salt to taste (if no filling is added)

optional,
Bacon or Ham
Cheese
Herbs
Pepper

Method:

DSC_0428

1. Separate the egg yolks and egg whites from the 2 eggs

DSC_0430crop

2. Whisk the egg white until foamy

DSC_0448

3. Combine egg yolks with the egg whites and pour into preheated pan with some butter on the pan.

DSC_0478

4. Place filling lightly in the centre of the omelette when egg is almost done
(dropping the ingredients too hard will cause the omelette to sink)

DSC_0481

5. Fold and cook until filling is fully cooked and melted.

DSC_0511

Results? Its like a fluffy pancake omelette named Souffle Omelette by Chef Kevin :D

Additional Notes:
*Can also be done without filling, just remember to flip the egg
** Salt needs to be added during step 2 if no filling is added

Deep Fried Kailan and Kailan Soup

Myself, Rebecca, Kevin, Brendan, Rainier and Amelia were kidding so much about Umami during Rebecca's Table for Four till I keep thinking of making an Umami dish, but without the common ajinomoto and just natural ingredients which has natural Umami flavour involve.

I was once told by my lecturer that if you deep fry kai lan(chiffonade) you would get something like a seaweed. And *ding* I think I've got a connection with Umami!
I felt like, why not put my own twist on it; deep fried kailan soup which will taste something like a korean seaweed soup? Umami dish?

That was the idea, and i normally get really excited when I have an "experiment" on my mind. Don't you?
Well, here's for you to pick my brain a little. Enjoy!

Whaddaya' need?
Kai Lan, chiffonade
Chicken Stock, homemade
Meatballs (i cheated and used ready made pork balls. beef or chicken meatballs will be fine too)
Salt & Pepper
Soy Sauce
Oil

Directions:
1. Prepare chicken stock. *keep in mind, you can do this beforehand.
2. Marinate Kai Lan with salt and pepper. (5minutes will do)
3. Deep fry Kai Lan till crispy.
4. Add fried Kai Lan into chicken stock.
5. Add meatballs and soy sauce to taste till meatballs are done.

Raw Kai Lan, chiffonade

DSC_0440

Crispy Fried Kai Lan

Crispy fried kai lan which has some bitter taste at the end, due to the natural taste of kailan. It can be served with rice. Hmmm...Perhaps I should add some toasted sesame seed for extra colour and better presentation?

DSC_0507

Deep Fried Kailan Soup

I was really happy because it did really taste like seaweed soup :)

On a not-so-good-note; It was quite oily, maybe the next time I should try this recipe but sun/toast the kailan and add some suitable noodles, toufu or maybe use ikan bilis stock? Aah, we'll leave that for another day. Umami without Ajinomoto, its possible! Mission Accomplished! :)

Egg in a Basket

Have you ever wanted to impress someone, who perhaps you had an interest in?
Well, I'm pretty sure the thought of cooking probably popped out at one point or another.

Problem is, what if you have no idea of "wth" happens in a kitchen, how could you even think of cooking to impress that someone? Ahh, fret not! Here it is, something really simple and sweet, sweet as in it will definitely melt your someone specials heart :P Guaranteed!

What you will need?
Eggs
Bread
Salt
Pepper
Heart Shape Mould (optional)
Butter / Cooking Oil

Nothing too fancy, just something ordinary your house should have or even if you don't, this are the simplest and easiest ingredients to be sought after right?

Method:
1. Cut out a heart shape(or round shape) on the bread.
2. Toast the bread on the frying pan with some oil/butter.
3. Add the egg to the centre and fry till the egg is full cooked and sprinkle a little salt and pepper.

Egg in a Basket

Now anyone would love a breakfast like this, cook this up for your loved ones tomorrow morning!
Add a spoonful of berry jams, marmalade or even tomato sauce for an extra tinge of sweetness.

You could also name it bird's nest, bull's eye eggs, cowboy eggs, egg in the hole, eggs in a blanket, elephant egg bagel, frog in a hole, gas house eggs, moon eggs, and Rocky Mountain toast. So now you can name a dish specially for your loved ones, just for the right occasion :)

Sweet Herbal Chinese Egg Tea

When i was a kid, I visited this restaurant at Taman OUG called Ah Loy Restaurant and since then I think I've discovered something really special. (:

A tea based tong shui which is sweet and with a little tinge of bitterness from the tea and herbs with an egg in the tong shui to balanced up the bitterness.

So here it is, an even better homemade version of that! It took me quite a while to research all this, spending so much time at various yok choi poh(chinese medicine shop) buying herbs, testing it, asking friends and family and also checking almost all the herbs website online.

But anyhoo, it turned out delicious! So do enjoy!

Sweet Herbal Chinese Egg Tea
Ingredients:
For Herbs Mixture,
Wu Yi Tea (Wu Yi Cha, 武夷茶)
Mulberry Mistletoe Stems (Sang Ji Sheng, 桑寄生)
Rehmannia Root/Chinese Foxglove Root (Shu Di Huang, 熟地黄)
Dried Orange Peel (Chen Pi, 陈皮)
Dried Longan (Long Yan Rou, 龍眼肉)
Chinese Angelica Root (Dang Gui, 当归)
Szechuan Lovage Root (Chuan Xiong,川芎)
Shelled Chestnuts (Mi Zao, 蜜棗)

Others,
A cup of water per serving
Brown Sugar to taste

DSC_0446
Best to ask the sifu(master) in the yok choi poh(chinese medicine shop) to choose the ingredients for you because it would be a trouble to get specific amount of all the herbs. Make sure you tell them that this recipe is meant to be sweet.

Method:
1. Rinse the herbs twice (For hygienic purpose)
2. Boil herbs and water with low fire for at least 1-2 hours.
3. While herbs are boiling, cook hard boil eggs in a separate pot.
4. Remove shell from hard boil eggs and toss them back into the boiling herbs/ egg tea to allow them to absorb some flavour and leave for about half an hour.
5. Add brown sugar to taste and serve cold or warm with egg and longan.

DSC_0545
Egg Tea is traditionally eaten cold. And trust me you would prefer the cold one over the hot ones.

Honestly readers, this is my second secret recipe( first one is on 芋虾 (Yu Xia) ).
Aren't you lucky?
I didn't share that recipe 'cause I felt this recipe's a little bit more special, plus its healthier and last but not least, though I may not know all of you personally, I love you ALL! Enjoy!

Home Wine Making

I did a 3 month oenology assignment on homemade wine making ,
and would like to share this "recipe" with u guys out there ;)

Ingredients :
1.5kg Grapes
an Yeast (sour)
an Sweetener
1 litre R.O Water

Equipment :
Bottle
Bowl
Balloon
2 Strainer (muslin cloth)

Method :
1. Crush the grapes and transfer to a bowl.
2. Transfer grape juice with strainer to bottle.
3. Add R.O water , sweetener and yeast until bottle almost full.
4. Wrap the top with balloon and leave it in the chiller for 3 months.

Tips :
- Grapes( different grapes gives different characteristics. for example black grapes for red wine and white grapes for white wine, or you could get wine grapes, grape concentrated or even apple juice and any other fruit juices )
- Crushing/ Pressing the grapes ( one of the most important of all, different pressing methods and techniques brings different characteristics because different component of the grapes gives different functions )
- Yeast( there are many yeast outside and probably the best choice is sour yeast/wine yeast , but u could try any other yeast )
- Bowl ( apparently different types of bowl gives different characteristics too )
- Sweetener ( rock sugar, cane sugar, honey, molasses and anything that basically contain sugar)
- Colour ( u can try leaving the grape skin in the bottle during fermentation so that the colour would be dark red but do remember grape skin gives tannin too )
- Storage ( make sure its kept in a dark , cool temperature, least vibration and good airing place. Chiller, the best recommendation )
- Fermentation period ( 3 months at least)
- Others ( u can try leaving wood in the fermentation process for oak taste, a cheaper alternative )

i did mine and ferment it for 3 months with the balloon like this...
17032009349edit2p
19032009354editp
and after 3 months,

tadaaa :)

good luck to whoever that is going to try this ! :D
